French 19th Century Copper Kettle with Covered Top

Copper has been the cooking medium of choice by chefs for hundreds of years. Chefs used these copper fish kettles to cook fish in a way that they can be left whole; adding to the dish’s visual appeal as well as enhancing its flavor. This kettle still has its original fitted lid. These are usually lost over time. This kettle’s short and wide stature means it would have been used to cook shorter fish, and could also be used to braise meats and poultry.
